Ingredients

TANGY PASSIONFRUIT SAUCE

  • 1 cup caster sugar
  • 1/2 cup water
  • Pulp of 8 Passionfruit

FRUIT TOAST

  • 8 slices, thick cut fruit toast
  • 1/2 cup ricotta
  • 2 bananas, sliced into thin slices

Method

TANGY PASSIONFRUIT SAUCE

  1. Place caster sugar and ½ cup water in a saucepan over low heat and stir to dissolve sugar
  2. Increase the heat to medium-high and simmer for 3 minutes until syrupy
  3. Stir in the passionfruit pulp and simmer gently for 3 minutes
  4. Allow to cool

FRUIT TOAST

  1. Toast fruit bread until crisp. Spread each slice with 1-2 tablespoons of ricotta. Top with banana slices. Finish with 2 tablespoons of passionfruit syrup.
